Ingredients

  • 1 cup Canned black beans (rinsed and drained)
  • 0.5 cup Rolled oats
  • 0.5 cup Natural unsweetened applesauce
  • 0.25 cup Honey or maple syrup
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cup Dark chocolate chips (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line a muffin tin with 6 paper liners or grease the tin with non-stick spray.

Step 2

Place the black beans, rolled oats, applesauce, honey or maple syrup, cocoa powder, baking powder, baking soda, and salt into a blender or food processor.

Step 3

Blend or process the mixture until it is completely smooth and no bean pieces are visible. Scrape the sides of the blender as needed.

Step 4

Add the eggs and vanilla extract to the blender, and blend again until combined.

Step 5

If using chocolate chips, gently fold them into the batter using a spoon or spatula.

Step 6

Divide the batter evenly among the 6 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve immediately or store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
