Ingredients

  • 4 fillets Flounder fillets
  • 2 cups Fresh arugula
  • 0.33 cup Sun-dried tomatoes (in oil, drained and chopped)
  • 2 cloves Garlic
  • 0.25 cup Parmesan cheese (grated)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.

Step 2

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the arugula to the skillet. Cook for 2-3 minutes, stirring frequently, until it is wilted.

Step 4

Remove the skillet from heat and stir in the chopped sun-dried tomatoes and grated parmesan cheese. Set the mixture aside to cool slightly.

Step 5

Lay the flounder fillets flat on a clean work surface. Divide the arugula and sun-dried tomato mixture evenly among the fillets, placing the mixture in the center of each fillet.

Step 6

Carefully roll each fillet around the stuffing, starting from one end and rolling tightly. Secure each roll with a toothpick if necessary.
