Ingredients

  • 1 pound Ground pork sausage
  • 1 tablespoon Butter
  • 1 medium Yellow onion, finely chopped
  • 1 medium Red bell pepper, finely diced
  • 2 cups Fresh spinach, chopped
  • 6 large Eggs
  • 1 cup Whole milk
  • 1 cup Shredded sharp cheddar cheese
  • 1 cup Shredded pepper jack cheese
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly cracked black pepper
  • 0.25 teaspoon Hot sauce (optional)
  • 2 tablespoons Chopped fresh parsley
  • 0 Nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with nonstick cooking spray.

Step 2

In a large skillet over medium heat, cook the sausage, breaking it into crumbles, until browned and fully cooked. Transfer the cooked sausage to a plate lined with paper towels to drain excess grease.

Step 3

In the same skillet, melt the butter over medium heat. Add the chopped onion and red bell pepper, cooking until softened, about 3 to 5 minutes. Stir in the chopped spinach and cook for another 2 minutes until wilted. Remove the skillet from heat and set the vegetables aside to cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, milk, flour, baking powder, salt, black pepper, and hot sauce if using. Whisk until the mixture is smooth and well combined.

Step 5

Stir the cooked sausage, sautéed vegetables, shredded cheddar cheese, shredded pepper jack cheese, and chopped parsley into the egg mixture. Mix well to evenly distribute the ingredients.

Step 6

Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula.

Step 7

Bake the quiche in the preheated oven for 30 to 35 minutes, or until the top is golden and the center is set. A knife inserted into the center should come out clean.

Step 8

Remove the dish from the oven and let it cool for about 10 minutes.

Step 9

Slice the quiche into 12 squares and serve warm. Optionally, garnish with additional parsley or a dash of hot sauce.
