Ingredients

  • 2 cups Pinto beans (canned, drained and rinsed, or cooked from dried)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 1 tablespoon Fresh lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 pieces Flour tortillas (large, burrito-sized)
  • 1 cup Cooked white or brown rice
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Salsa (mild, medium, or hot, per preference)
  • 2 tablespoons Fresh cilantro, chopped
  • 1 medium Avocado, sliced
  • 0.5 cup Sour cream (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Once the oil is hot, sauté the diced onion for 3-4 minutes, or until translucent and fragrant.

Step 3

Add the minced garlic and sauté for another minute.

Step 4

Stir in the ground cumin, smoked paprika, and chili powder, allowing the spices to toast for 30 seconds.

Step 5

Add the pinto beans to the skillet. Stir well to coat the beans in the spice mixture.

Step 6

Season with salt and black pepper. Cook for 5-7 minutes, stirring occasionally, until the beans are heated through and slightly softened.

Step 7

Mash some of the beans with the back of a spoon for a creamier texture (optional). Add the fresh lime juice and stir to combine.

Step 8

Warm the flour tortillas in a skillet over medium heat or wrap them in a damp paper towel and microwave for 20-30 seconds.

Step 9

Assemble the burritos: Place a warmed tortilla on a flat surface and spread a few spoonfuls of cooked rice in the center.

Step 10

Top the rice with a generous spoonful of the seasoned pinto beans, followed by shredded cheddar cheese, salsa, fresh cilantro, and slices of avocado.

Step 11

If using, add a dollop of sour cream on top.

Step 12

Fold the sides of the tortilla inward, then roll it tightly from the bottom up to form a burrito. Repeat with the remaining tortillas and fillings.

Step 13

Serve immediately or wrap the burritos in foil to keep them warm until ready to enjoy.
