  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Soy sauce
  • 0.25 teaspoon Salt

Directions

Step 1

Slice the avocado in half, remove the pit, and scoop out the flesh. Slice into thin wedges.

Step 3

Thinly slice the red onion into small rings or strips.

Step 4

In a large mixing bowl, combine the mixed greens, citrus segments, avocado slices, red onion, and candied pecans.

Step 5

To make the ginger dressing, whisk together the minced fresh ginger, rice vinegar, olive oil, honey, soy sauce, salt, and black pepper in a small bowl until well emulsified. Taste and adjust seasoning if needed.

Step 6

Drizzle the ginger dressing over the salad just before serving, and toss gently to coat all the ingredients evenly.

Serve the salad immediately as a light and refreshing appetizer or side.
