Ingredients

  • 500 g Brussels sprouts
  • 150 g Bacon
  • 3 units Shallots
  • 2 tbsp Butter
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Ground nutmeg
  • 100 ml Chicken or vegetable stock
  • 1 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Trim the ends of the Brussels sprouts and remove any tough outer leaves. Rinse them well under cold water, then slice them in half lengthwise.

Step 2

Dice the bacon into small pieces. Peel and thinly slice the shallots.

Step 3

In a large skillet or sauté pan, melt 1 tablespoon of butter over medium heat. Add the bacon and cook until crispy, about 4–5 minutes. Remove the bacon with a slotted spoon and set aside on a plate lined with paper towels.

Step 4

In the same pan, add the sliced shallots and cook in the rendered bacon fat for 3–4 minutes, stirring frequently, until softened and caramelized.

Step 5

Add the remaining 1 tablespoon of butter to the pan and stir in the Brussels sprouts. Sprinkle with salt, black pepper, and nutmeg, and toss to coat evenly.

Step 6

Pour the stock into the pan and cover with a lid. Allow the Brussels sprouts to steam for 5–8 minutes, or until they are tender but retain a slight crunch.

Step 7

Remove the lid and increase the heat to medium-high to allow the liquid to evaporate. Stir occasionally to prevent sticking.

Once most of the liquid has evaporated and the Brussels sprouts are slightly golden, return the crispy bacon to the pan and stir to combine.

Step 9

Transfer the Flemish Sprouts to a serving dish and garnish with chopped fresh parsley if desired. Serve warm and enjoy!
