  • 12 oz Belgian-style dark beer
  • 1 cup Beef stock
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the beef chuck roast dry with paper towels, then cut it into 2-inch cubes. Season the beef generously with salt and black pepper.

Step 2

Place the beef cubes in a mixing bowl and sprinkle with all-purpose flour, tossing to coat evenly.

Heat 1 tablespoon of olive oil and 2 tablespoons of unsalted butter in a large skillet over medium-high heat.
