  • 1.5 lbs Boneless, skinless chicken thighs
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Chili powder
  • 1 tsp Dried oregano
  • 1.5 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 cup Chicken stock or water
  • 2 tbsp Fresh lime juice
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Push the onions and garlic to one side of the pan and place the chicken thighs in the center. Let them sear for 2-3 minutes per side until lightly golden but not fully cooked through.
