Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 cup brown rice
  • 2 cups water
  • 1 piece red bell pepper
  • 1 piece zucchini
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame seeds

Directions

Step 1

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Cook the chicken breasts in the skillet until golden brown on both sides and cooked through, approximately 6-7 minutes per side. Remove from the skillet and let rest for 5 minutes before slicing.

Meanwhile, rinse the brown rice under cold water and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover. Cook for 35-40 minutes until the rice is tender and all the water is absorbed.
