Ingredients

  • 1 lb Flat iron steak
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 1 medium Shallot, finely minced
  • 0.5 cup Balsamic vinegar
  • 1 tbsp Brown sugar
  • 1 sprig Fresh thyme (optional)

Directions

Step 1

Remove the flat iron steak from the fridge and let it sit at room temperature for 20-30 minutes before cooking.

Step 2

Season both sides of the steak generously with salt and black pepper.

Step 3

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot and shimmering, add the steak to the pan.

Step 4

Sear the steak for 4-5 minutes on each side for medium-rare, or cook to your desired level of doneness. Use an instant-read thermometer to check the internal temperature if needed (130°F for medium-rare).

Step 5

Remove the steak from the skillet and let it rest on a cutting board, tented with foil, for 7-10 minutes.

Step 6

While the steak rests, prepare the balsamic reduction. Reduce the skillet heat to medium and add the remaining 1 tablespoon of olive oil and butter.

Step 7

Add the minced shallot to the skillet and sauté for 2-3 minutes until softened and fragrant.

Step 8

Pour in the balsamic vinegar, scraping the bottom of the pan to deglaze and loosen any browned bits.

Step 9

Stir in the brown sugar and fresh thyme (if using). Simmer the mixture for 5-7 minutes, or until it reduces by about half and becomes a slightly thickened sauce.

Step 10

Taste the reduction and adjust seasoning with a pinch of salt if needed.

Step 11

Slice the rested steak against the grain into thin strips and arrange on a platter or individual plates.

Step 12

Drizzle the balsamic reduction over the steak and serve immediately. Optional: Garnish with fresh thyme leaves for an elegant touch.
