Ingredients

  • 4 pieces black tea bags
  • 4 cups boiling water
  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh orange juice
  • 2 cups sparkling water
  • 2 cups ice cubes
  • 4 pieces lemon slices (for garnish)
  • 4 pieces orange slices (for garnish)
  • 8 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

In a heatproof jug or pot, steep the black tea bags in 4 cups of boiling water for 5 minutes.

Step 2

While the tea is steeping, in a small saucepan, combine the raspberries and granulated sugar. Place over medium heat and cook for 3–4 minutes, stirring occasionally, until the raspberries break down into a syrup-like consistency. Remove from heat and set aside to cool slightly.

Step 3

Remove the tea bags from the jug and allow the brewed tea to cool to room temperature.

Step 4

In a large pitcher, strain the raspberry syrup through a fine-mesh sieve, pressing down with a spoon to extract as much liquid as possible. Discard the solids.

Step 5

Add the cooled tea to the pitcher along with the fresh lemon juice and orange juice. Stir well to combine.

Step 6

Chill the tea mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.

Just before serving, pour the sparkling water into the tea and gently stir to incorporate the fizz.
