  • 200 grams all-purpose flour
  • 115 grams unsalted butter, cold and cubed

  • 1 egg yolk
  • 2 tablespoons ice water
  • 200 grams white chocolate
  • 120 milliliters heavy cream
  • 150 grams cream cheese, softened
  • 1 teaspoon vanilla extract
  • 250 grams mixed fresh fruits (strawberries, blueberries, kiwi, etc.)
  • 2 tablespoons apricot jam
  • 1 tablespoon water (for thinning jam)

Directions

Step 1

Preheat your oven to 175°C (350°F).

In a large bowl, combine the flour and powdered sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse sand.
