Ingredients

  • 14 oz Sweetened condensed milk
  • 2 cups White chocolate chips
  • 1 tsp Vanilla extract
  • 0.25 tsp Salt
  • 0.5 cup Shelled pistachios (roughly chopped)
  • 0.5 cup Dried cranberries (roughly chopped)

Directions

Step 1

Line an 8x8-inch square pan with parchment paper, leaving an overhang on the sides for easy removal later.

Step 2

In a microwave-safe bowl, combine the sweetened condensed milk and white chocolate chips. Microwave on high for 30-second intervals, stirring well after each interval, until the white chocolate is completely melted and the mixture is smooth. This should take 1-2 minutes in total.

Step 3

Stir in the vanilla extract and salt until fully combined.

Step 4

Fold in the chopped pistachios and dried cranberries, reserving a small handful of each for topping.

Step 5

Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula. Sprinkle the reserved pistachios and cranberries on top, pressing them gently into the surface.

Step 6

Let the fudge set at room temperature for 1-2 hours, or speed up the process by refrigerating it for about 30 minutes.

Step 7

Once set, use the parchment paper to lift the fudge out of the pan. Cut into 16 small squares or your desired size. Serve and enjoy!
