Ingredients

  • 3 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 1 medium red bell pepper, diced
  • 28 oz crushed tomatoes (canned)
  • 4 cups fish stock (or chicken stock)
  • 1 cup dry white wine
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon red chili flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 lb fresh cod, cut into chunks
  • 1 lb peeled and deveined shrimp
  • 0.5 lb sea scallops
  • 1 lb mussels, cleaned and debearded
  • 1 lb clams, cleaned
  • 3 tablespoons fresh parsley, chopped
  • 1 loaf crusty bread (for serving)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the diced onion, garlic, celery, carrots, and red bell pepper. Sauté for 6-8 minutes, or until softened and fragrant.

Step 3

Pour in the crushed tomatoes, fish stock, and white wine. Stir to combine.

Step 4

Add the bay leaves, oregano, thyme, red chili flakes, salt, and black pepper. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 15 minutes to allow the flavors to meld together.

Step 5

Add the cod chunks to the pot and simmer for 5 minutes.

Step 6

Gently stir in the shrimp and scallops. Cook for another 3-4 minutes, or until the shrimp start to turn pink.

Step 7

Add the mussels and clams to the pot. Cover and let simmer for 5-7 minutes, or until the shells open. Discard any that remain closed.

Step 8

Taste and adjust seasoning if necessary.

Step 9

Ladle the stew into bowls and garnish with chopped fresh parsley.

Step 10

Serve hot with crusty bread on the side to soak up the flavorful broth.
