Ingredients

  • 4 slices sourdough bread
  • 2 tablespoons unsalted butter
  • 4 tablespoons cream cheese
  • 1 cup cooked crab meat or small shrimp
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon old bay seasoning
  • 1 teaspoon lemon juice
  • 2 tablespoons green onions, finely chopped

Directions

Step 1

In a small bowl, mix the cream cheese, Old Bay seasoning, lemon juice, and green onions until well combined.

Step 2

Gently fold in the cooked crab meat or small shrimp, ensuring it is evenly coated with the cream cheese mixture. Set aside.

Step 3

Butter one side of each slice of sourdough bread.

Step 4

Heat a large skillet over medium heat.

Step 5

Place one slice of sourdough bread butter-side down into the skillet.

Step 6

Spread 2 tablespoons of the crab or shrimp mixture onto the unbuttered side of the bread in the skillet.

Step 7

Sprinkle 2 tablespoons of shredded cheddar cheese and 2 tablespoons of shredded Monterey Jack cheese on top of the crab or shrimp mixture.

Step 8

Place another slice of sourdough bread on top, butter-side up, forming a sandwich.

Step 9

Cook for 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and cook the other side for another 3-4 minutes, or until the bread is golden and the cheese is fully melted.

Step 10

Remove the sandwich from the skillet and repeat with the second sandwich.

Step 11

Slice sandwiches in half and serve immediately, optionally paired with a bowl of tomato or clam chowder soup for dipping.
