Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 4 minced garlic cloves
  • 2 diced celery stalks
  • 1 large, diced carrot
  • 28 ounces crushed tomatoes
  • 4 cups vegetable or fish stock
  • 1 cup dry white wine
  • 1 leaf bay leaf
  • 1 teaspoon paprika
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon fresh thyme
  • 1 pound, cut into bite-sized pieces cod or other firm white fish
  • 0.5 pound, peeled and deveined large shrimp
  • 1 pound, scrubbed and cleaned mussels or clams
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 2 tablespoons, chopped (for garnish) fresh parsley
  • 1 loaf, for serving (optional) crusty bread

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add the diced onion, garlic, celery, and carrot, and sauté for 5-7 minutes, or until the vegetables are softened and fragrant.

Step 3

Stir in the crushed tomatoes, vegetable or fish stock, white wine, bay leaf, paprika, red pepper flakes, and thyme.

Step 4

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 15 minutes to allow the flavors to meld.

Step 5

Add the cod pieces and simmer for 5 minutes.

Step 6

Gently stir in the shrimp and mussels or clams, covering the pot with a lid. Cook for an additional 5-7 minutes, or until the shrimp are pink and fully cooked and the mussels or clams have opened. Discard any that remain closed.

Step 7

Season the stew with salt and black pepper to taste.

Step 8

Ladle the stew into bowls, garnish with fresh parsley, and serve hot with crusty bread on the side if desired.
