  • 600 grams white fish fillets (cod, haddock, or similar)
  • 200 grams prawns (raw, peeled and deveined)
  • 500 ml milk
  • 75 grams unsalted butter
  • 50 grams all-purpose flour
  • 1 medium leek (sliced)
  • 1 medium onion (peeled and quartered)
  • 2 bay leaves
  • 10 grams fresh parsley (chopped)
  • 1 kilogram potatoes (peeled and chopped)
  • 50 ml heavy cream
  • 100 grams cheddar cheese (grated)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Start by preparing the potatoes. Place them in a large pot of salted water, bring to a boil, and cook until tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, pour the milk into a deep frying pan. Add the onion quarters and bay leaves, and gently heat the milk until it begins to bubble slightly.

Add the fish fillets to the milk and poach gently for 5 minutes. Remove the fish carefully with a slotted spoon, and set aside. Strain the milk into a bowl to remove the onion and bay leaves, and reserve the milk for the sauce.

In a separate saucepan, melt 50 grams of butter over medium heat. Add the flour and stir continuously for 1-2 minutes to form a roux.

Gradually whisk in the reserved poaching milk, ensuring no lumps form. Continue stirring until the sauce thickens and becomes smooth.

Add the sliced leek to the sauce and cook for 2-3 minutes until softened. Stir in the cooked fish, prawns, parsley, and season with black pepper and a pinch of nutmeg, if desired.

Once the potatoes are tender, drain them and mash together with the remaining 25 grams of butter, heavy cream, and a generous pinch of salt.

Transfer the fish mixture to a deep, ovenproof dish and spread the mashed potatoes evenly on top. Use a fork to create textured lines in the potatoes.

Sprinkle the grated cheddar cheese over the mashed potatoes for a golden, crispy topping.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbling.

Remove from the oven and let the dish rest for 5 minutes before serving.

Garnish with fresh parsley and serve warm with a side of crusty bread or steamed vegetables.
