  • 120 milliliters dry white wine
  • 120 milliliters low-sodium chicken or vegetable stock
  • 1 teaspoon fresh thyme leaves
  • 1 piece lemon, juiced
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the fish fillets dry with paper towels and season both sides with salt and black pepper. Set aside.

Step 2

Clean the shiitake mushrooms, remove the stems, and slice the caps into thin strips.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the fish fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate, covering loosely with foil to keep warm.
