Ingredients

  • 4 pieces fish fillets (e.g. cod, halibut, or tilapia)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 pieces fresh mandarin oranges
  • 2 tablespoons unsalted butter
  • 2 cloves garlic cloves, minced
  • 2 tablespoons fresh dill, finely chopped
  • 0.5 cup heavy cream
  • 0.25 cup chicken or vegetable stock
  • 1 teaspoon cornstarch
  • 2 teaspoons water

Directions

Step 1

Pat the fish fillets dry with paper towels. Season both sides of the fillets evenly with salt and black pepper.

Step 2

Heat the olive oil in a large non-stick skillet over medium heat. Once hot, place the fish fillets in the skillet and cook for 3-4 minutes per side, or until golden and cooked through (fish should flake easily with a fork). Remove the fish from the skillet and set aside, covered, to keep warm.

Step 3

Peel the mandarin oranges and separate them into segments. Reserve a few segments for garnish and squeeze the juice from the rest into a bowl. Set aside.

Step 4

In the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant, but not browned.

Step 5

Pour in the chicken or vegetable stock and add the mandarin juice. Stir and bring to a gentle simmer.

Step 6

Whisk the cornstarch and water together in a small bowl to create a slurry. Slowly pour the slurry into the skillet, stirring constantly to thicken the sauce.

Step 7

Once the sauce begins to thicken, stir in the heavy cream and chopped dill. Simmer for another 2-3 minutes, allowing the flavors to meld. Adjust seasoning with additional salt and pepper, if needed.

Step 8

Return the cooked fish fillets to the skillet, spooning the sauce over the top to coat. Cook for 1-2 minutes to warm through.

Step 9

Plate the fish and drizzle with extra sauce. Garnish with reserved mandarin segments and additional fresh dill, if desired.

Step 10

Serve immediately with your choice of sides, such as steamed vegetables, rice, or roasted potatoes.
