Ingredients

  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 2 cups Cooked white rice
  • 1 medium Onion, finely chopped
  • 1 medium Red bell pepper, diced
  • 1 medium Green bell pepper, diced
  • 2 stalks Celery stalks, finely chopped
  • 3 cloves Garlic cloves, minced
  • 14.5 ounces Diced tomatoes (canned, with juices)
  • 0.5 cup Chicken broth
  • 1 tablespoon Creole seasoning
  • 2 stalks Scallions, sliced (for garnish)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Season the fish fillets on both sides with salt, black pepper, cayenne pepper, and paprika. Set aside.

Step 2

Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat. Once hot, add the fish fillets and sear for 3-4 minutes per side, until golden brown and cooked through. Remove the fillets from the pan and set them aside, covered to keep warm.
