Ingredients

  • 500 grams Fish fillets (e.g., snapper, tilapia, or cod)
  • 1 teaspoon Turmeric powder
  • 1.5 teaspoons Salt
  • 4 tablespoons Vegetable oil
  • 2 medium Onions, finely sliced
  • 3 medium Tomatoes, finely chopped
  • 2 teaspoons Ginger-garlic paste
  • 2 pieces Green chilies, slit lengthwise
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 8 leaves Curry leaves
  • 3 tablespoons Fresh cilantro, chopped
  • 1 cup Water
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse and pat dry the fish fillets. Marinate them with 1/2 teaspoon turmeric powder and 1/2 teaspoon salt. Set aside for 15 minutes.

Step 2

Heat 2 tablespoons of vegetable oil in a large pan over medium heat. Fry the fish fillets until they are golden brown on both sides. Remove the fish and set aside.

Step 3

In the same pan, add the remaining 2 tablespoons of oil. Add the curry leaves and sauté for 30 seconds until aromatic.

Step 4

Add the sliced onions and sauté until they turn golden brown, about 7-8 minutes.

Step 5

Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell disappears.

Step 6

Add the chopped tomatoes and cook until they soften and the oil begins to separate, around 5-7 minutes.

Lower the heat and add the coriander powder, cumin powder, red chili powder, and the remaining turmeric powder. Stir well to combine.

Add the slit green chilies and 1 cup of water. Let the sauce simmer for 5 minutes to allow the flavors to meld.

Gently place the fried fish fillets into the pan. Spoon the sauce over the fish and let it cook for another 5 minutes on low heat.

Step 10

Sprinkle garam masala and drizzle lemon juice over the dish. Mix gently to avoid breaking the fish.

Garnish with freshly chopped cilantro and serve hot with steamed rice or flatbread.
