  • 3 cups Low-sodium chicken or vegetable broth
  • 2 cloves Garlic cloves, minced
  • 1 medium Onion, finely chopped
  • 1 medium Carrot, diced
  • 1 stalk Celery stalk, diced
  • 3 sprigs Fresh thyme sprigs
  • 2 tablespoons Lemon juice
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh parsley, finely chopped (optional for garnish)

Directions

Step 1

Rinse the lentils thoroughly under cold water and set aside.

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the onion, carrot, celery, and garlic. Sauté for 5-7 minutes or until the vegetables are soft and fragrant.
