Ingredients

  • 4 pieces white fish fillets (such as cod, halibut, or tilapia)
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 0.5 cup kalamata olives, pitted and sliced
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons lemon juice, freshly squeezed
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season both sides of the fish fillets with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Once the oil is hot, carefully place the fish fillets in the skillet. Cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fish from the skillet and set aside on a plate.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for 1 minute, or until fragrant.

Return the cooked fish fillets to the skillet, spooning the Mediterranean sauce over the top. Cook for 2 minutes to warm the fish through.

Step 10

Serve immediately, garnished with additional fresh parsley or basil if desired.
