Ingredients

  • 500 g White fish fillets (e.g., cod or haddock), skinless and boneless
  • 500 ml Milk
  • 50 g Butter
  • 50 g Plain flour
  • 100 g Grated cheese (e.g., mature cheddar)
  • 200 g Cooked peeled prawns
  • 150 g Frozen peas
  • 800 g Potatoes, peeled and chopped
  • 50 ml Double cream
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)
  • 1 Ready-made puff pastry sheets
  • 1 Egg, beaten (for brushing)

Directions

Step 1

Preheat your oven to 200°C (180°C fan) or 400°F.

Step 2

Place the potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 12-15 minutes. Drain and mash with the double cream, a pinch of salt, and some black pepper. Set aside.

Step 3

Poach the fish fillets in a saucepan with the milk on medium heat for about 5-7 minutes, until just cooked through. Remove the fish with a slotted spoon and flake it into bite-sized pieces. Reserve the milk.

Step 4

In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.

Gradually add the reserved milk to the roux, whisking continuously to create a smooth sauce. Cook for a few minutes until thickened.

Stir in the grated cheese, mixing until melted. Season the sauce with salt, black pepper, and optional parsley.

Spoon the mashed potatoes on top of the fish mixture in each ramekin, spreading it evenly to cover completely.

Cut the puff pastry sheets into six circles slightly larger than the diameter of the ramekins. Place a pastry circle over each, pressing the edges lightly to seal.

Step 10

Brush the tops with the beaten egg for a golden finish.

Step 11

Bake the pies in the preheated oven for about 20-25 minutes, or until the pastry is puffed and golden brown.
