Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 28 ounces canned whole peeled tomatoes
  • 4 cups chicken or vegetable broth
  • 0.5 cups heavy cream
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons red pepper flakes
  • 0.25 teaspoons cayenne pepper (optional, for extra heat)
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh basil leaves, chopped (optional, for garnish)
  • 0 crusty bread or croutons (optional, for serving)

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and sauté for 5-7 minutes, stirring occasionally, until softened and translucent.

Step 3

Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.

Step 4

Pour in the canned whole peeled tomatoes, including their juice, and break them up using a wooden spoon or potato masher.

Step 5

Stir in the chicken or vegetable broth, smoked paprika, red pepper flakes, cayenne pepper (if using), sugar, kosher salt, and black pepper.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 20 minutes, stirring occasionally.

Ladle the soup into bowls and garnish with chopped fresh basil leaves, if desired.

Step 10
