Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Red bell pepper, diced
  • 10 ounces Diced tomatoes with green chilies (Rotel or similar)
  • 2 tablespoons Tomato paste
  • 1.5 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper (optional for extra heat)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 ounces Cream cheese, softened
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Heavy cream
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 1 bag Tortilla chips

Directions

Step 1

In a large skillet or saute pan, cook the ground beef over medium heat until browned. Break it up into small pieces with a wooden spoon as it cooks.

Step 2

Drain excess grease from the skillet and push the cooked beef to the side.

Step 3

Add the diced onion, minced garlic, and diced red bell pepper to the skillet. Saute for 4-5 minutes until the vegetables are softened.

Step 4

Stir the cooked beef into the vegetable mixture. Add the diced tomatoes with green chilies, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix well to combine.

Step 5

Reduce heat to low and let the chili simmer for 10 minutes, stirring occasionally to meld the flavors.

Step 6

Meanwhile, in a medium saucepan over low heat, add the cream cheese, cheddar cheese, mozzarella cheese, and heavy cream. Stir constantly until the cheese has melted and the mixture is smooth and creamy.

Step 7

Slowly pour the cheese mixture into the skillet with the chili. Stir until fully combined and heated through.

Step 8

Transfer the queso dip to a serving dish or keep it warm in a crockpot. Garnish with fresh cilantro, if desired.

Step 9

Serve with tortilla chips for dipping and enjoy!
