Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef chuck, cubed
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 cup frozen peas
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 store-bought pie crusts (or homemade)
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the cubed beef in batches to avoid overcrowding, and sear until browned on all sides. Remove the beef and set it aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion, carrots, and celery until slightly softened, about 5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 5

Gradually pour in the beef broth while stirring to avoid lumps. Add the tomato paste and Worcestershire sauce, stirring until fully combined.

Step 6

Return the seared beef to the skillet along with any accumulated juices. Add the thyme, salt, and black pepper. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 20-25 minutes, or until the beef is tender and the sauce has thickened.

Step 7

Stir in the frozen peas and cook for another 5 minutes. Remove the skillet from heat and allow the filling to cool slightly.

Step 8

Roll out one pie crust and line a 9-inch pie dish with it. Trim any excess dough hanging over the edges.

Step 9

Fill the pie crust with the beef mixture, spreading it out evenly.

Step 10

Cover the pie with the second pie crust. Trim the excess dough and crimp the edges together to seal. Cut a few small slits in the top crust to allow steam to escape.

Step 11

Brush the beaten egg over the top crust for a glossy finish.

Step 12

Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden brown and flaky.

Step 13

Let the pie rest for 10 minutes before slicing and serving. Enjoy your Firehouse Beef Pie!
