Ingredients

  • 2 cups Rolled oats
  • 0.5 cup Raw almonds
  • 0.5 cup Walnuts
  • 0.25 cup Pumpkin seeds
  • 0.25 cup Sunflower seeds
  • 0.5 cup Dried cranberries
  • 0.5 cup Dried apricots, chopped
  • 0.25 cup Unsweetened shredded coconut
  • 1 teaspoon Ground cinnamon
  • 3 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0 Milk or yogurt (for serving, optional)
  • 0 Fresh fruit (for serving, optional)

Directions

Step 1

Preheat a large, dry skillet over medium heat.

Step 2

Add the rolled oats to the skillet and toast for 3-5 minutes, stirring frequently, until golden and fragrant. Remove from heat and let cool.

Step 3

Chop the almonds and walnuts into bite-sized pieces.

Step 4

In a large mixing bowl, combine the toasted oats, almonds, walnuts, pumpkin seeds, sunflower seeds, dried cranberries, dried apricots, shredded coconut, and ground cinnamon.

Step 5

In a small saucepan over low heat, warm the honey until it becomes runny, about 1-2 minutes. Stir in the vanilla extract.

Step 6

Drizzle the warmed honey mixture over the dry ingredients in the bowl. Use a large spoon or your hands to thoroughly mix everything together, ensuring the honey coats the ingredients evenly.

Step 7

Let the muesli cool completely before transferring it to an airtight container for storage. It can be stored for up to 2 weeks at room temperature.

Step 8

Serve the muesli with milk or yogurt and fresh fruit of your choice for a complete, healthy breakfast or snack.
