  • 1 cup Corn kernels (frozen or canned, drained)
  • 1 large Jalapeño, thinly sliced (optional)
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream
  • 1 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until soft, about 3-4 minutes.

Stir in the minced garlic and cook for another 1 minute, until fragrant.
