Ingredients

  • 1 lb Raw shrimp (peeled and deveined)

  • 0.25 tsp Black pepper
  • 6 cups Mixed salad greens
  • 1 cup Cherry tomatoes (halved)
  • 1 Cucumber (sliced into half moons)
  • 0.25 Red onion (thinly sliced)
  • 1 Avocado (sliced)
  • 2 tbsp Fresh cilantro leaves (chopped)
  • 2 tbsp Fresh lime juice
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • 1 clove Garlic (minced)
  • 2 tbsp Greek yogurt
  • 1 tbsp Water (if needed for thinning dressing)

Directions

Step 1

In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper until evenly coated.

Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until the shrimp are pink and fully cooked. Remove from heat and set aside.
