Ingredients

  • 500 g carrots
  • 500 ml water
  • 100 g uncooked short-grain white rice
  • 250 ml whole milk
  • 50 g unsalted butter, melted
  • 1 large egg
  • 3 tbsp breadcrumbs
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground white pepper
  • 1 tsp salt
  • 1 tsp butter, for greasing

Directions

Step 1

Peel and chop the carrots into small chunks. Add the carrots and water to a medium pot. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the carrots are very tender.

Step 2

While the carrots are cooking, rinse the rice under cold water until the water runs clear. In a separate pot, cook the rice with 200 ml of water over low heat until all water is absorbed. This will take about 10 minutes. Remove from heat and let it sit covered.

Once the carrots are tender, drain the water and use a food processor or immersion blender to puree the carrots until smooth. Let the puree cool for a few minutes.

In a large mixing bowl, combine the carrot puree, cooked rice, milk, melted butter, egg, nutmeg, white pepper, and salt. Mix thoroughly until the ingredients are well incorporated.

Preheat your oven to 175°C (350°F). Grease a 1.5-liter casserole dish or baking dish with butter.
