Ingredients

  • 2.5 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 Large eggs
  • 2 teaspoons Pure vanilla extract
  • 1 cup Whole milk
  • 1 cup Jam or custard (for filling)
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Alternately add the dry ingredients and the milk to the butter mixture, starting and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Allow the cakes to cool in the pans for 10 minutes, then invert them onto a wire rack to cool completely.

Step 9

Once the cakes are cooled, place one cake layer on a serving plate. Using the back of a spoon, hollow out a shallow 'S'-shaped groove in the center of the cake (leaving the edges intact).

Step 10

Fill the groove with jam or custard, spreading it evenly but not overflowing the edges. Place the second cake layer on top, aligning it carefully with the bottom layer.

Step 11

Dust the top of the cake with powdered sugar for garnish (optional). Slice and serve!
