Ingredients

  • 2 pieces fillet steaks
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 pieces garlic cloves
  • 3 sprigs fresh thyme sprigs
  • 1 cup dry red wine
  • 0.5 cup beef stock
  • 2 pieces shallots
  • 1 teaspoon honey

Directions

Step 1

Take the fillet steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature.

Step 2

Season the steaks generously with salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 4

Add the steaks to the hot skillet and sear for 2-3 minutes on each side, until a golden crust forms.

Step 5

Reduce the heat to medium, then add 1 tablespoon of butter, the garlic cloves (lightly crushed), and thyme sprigs to the skillet.

Step 6

Tilt the skillet and spoon the melted butter over the steaks continuously for 1-2 minutes.

Step 7

Remove the steaks from the skillet and let them rest on a plate, tented with foil.

Step 8

In the same skillet, add the remaining olive oil and sauté the finely chopped shallots until softened, about 2 minutes.

Step 9

Pour in the red wine, scraping the bottom of the skillet to deglaze and release any browned bits.

Step 10

Stir in the beef stock and honey, and let the mixture simmer over medium heat until reduced by half, about 5-7 minutes.

Step 11

Whisk in the remaining tablespoon of butter to create a glossy sauce.

Step 12

Return the rested steaks to the skillet and spoon the red wine sauce over them.

Step 13

Cook for an additional 1-2 minutes to warm the steaks, without overcooking.

Step 14

Serve the steaks on warm plates, drizzled with the red wine sauce and garnished with extra thyme if desired.
