Ingredients

  • 500 grams All-purpose flour
  • 325 milliliters Warm water
  • 7 grams Active dry yeast
  • 60 milliliters Olive oil
  • 10 grams Salt
  • 5 grams Granulated sugar
  • 250 grams Thinly sliced ham
  • 200 grams Fontina cheese, sliced
  • 2 tablespoons Thyme leaves (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the warm water, active dry yeast, and granulated sugar. Let it sit for 5 minutes until the mixture becomes frothy.

Step 2

Gradually add the all-purpose flour and salt, mixing with a wooden spoon or your hands until a rough dough forms.

Step 3

Add 40 ml of olive oil and knead the dough on a floured surface for about 8–10 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 5

Preheat the oven to 220°C (430°F). Grease a rectangular baking dish or a sheet pan with 10 ml of olive oil.

Step 6

Divide the dough into two equal portions. Roll one portion out and press it into the bottom of the prepared baking dish.

Step 7

Layer the ham slices evenly across the surface of the dough, leaving a small border around the edges. Follow with the Fontina cheese slices for a complete layer.

Step 8

Roll out the second portion of dough and lay it on top of the filling. Pinch the edges of the two dough layers together to seal them.

Step 9

Drizzle the remaining 10 ml of olive oil over the top and use your fingertips to gently press dimples into the surface of the dough.

Step 10

Bake in the preheated oven for 20–25 minutes, or until the focaccia is golden brown and puffed up.

Step 11

Allow the focaccia to cool for 5 minutes, then sprinkle with thyme leaves if using.

Step 12

Slice into squares or rectangles and serve warm. Enjoy the gooey cheese and savory ham combination!
