Ingredients

  • 4 pieces white fish filets (such as tilapia, cod, or sole)
  • 3 cups fresh spinach
  • 0.5 cups feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 6 pieces toothpicks or kitchen twine (for securing filets)
  • 0 nonstick cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a baking dish with nonstick cooking spray.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Step 3

Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Step 4

In a medium bowl, combine the sautéed spinach, crumbled feta cheese, dried oregano, salt, and black pepper. Mix well.

Step 5

Lay the fish filets flat on a clean surface. Place an equal amount of the spinach and feta mixture on one end of each filet.

Step 6

Carefully roll each filet around the filling and secure the seam with a toothpick or kitchen twine.

Step 7

Place the stuffed filets seam-side down in the prepared baking dish.

Step 8

Drizzle the remaining 1 tablespoon of olive oil and the fresh lemon juice evenly over the filets.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the fish flakes easily with a fork and is cooked through.

Step 10

Remove toothpicks or kitchen twine before serving. Serve hot with your choice of side dishes, such as roasted vegetables or rice.
