Ingredients

  • 2 pieces (4-6 oz. each) Cod fillets (or other white fish)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 1 cup Panko breadcrumbs
  • 1 cup Vegetable oil
  • 2 Soft hamburger buns
  • 2 American cheese slices
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Pickle relish
  • 1 teaspoon Lemon juice

Directions

Step 1

Season the cod fillets with salt and pepper on both sides. Set aside.

Step 2

Set up a breading station with three shallow bowls. In the first bowl, add all-purpose flour. In the second bowl, beat the eggs. In the third bowl, add panko breadcrumbs.

Coat each cod fillet in flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs. Press gently to ensure the breadcrumbs adhere well.
