  • 1 cup Madeira wine
  • 1 cup beef stock
  • 1 tablespoon heavy cream
  • 2 sprigs fresh thyme (optional, for garnish)

Directions

Step 1

Remove the filet mignon steaks from the refrigerator at least 30 minutes before cooking to allow them to come to room temperature.

Season both sides of the steaks generously with kosher salt and black pepper.

Heat a large skillet over medium-high heat and add the olive oil.
