Ingredients

  • 4 pieces Filet mignon steaks (2 inches thick)
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots, finely chopped
  • 1 clove Garlic, minced
  • 1 cup Cognac
  • 1 cup Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Fresh parsley, chopped

Directions

Step 1

Remove the filet mignon from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat the steaks dry with a paper towel.

Step 2

Season both sides of each steak generously with salt and freshly ground black pepper.

Step 3

Heat a large, heavy skillet over medium-high heat. Add the olive oil and swirl to coat the pan. Once the oil is shimmering and hot, add the filet mignon steaks.

Step 4

Sear the steaks for 3-4 minutes on each side for medium-rare, or cook to your desired doneness. Adjust the cooking time based on steak thickness and preference.

Step 5

Remove the steaks from the skillet and place them on a plate. Tent them loosely with aluminum foil to rest while you prepare the sauce.
