  • 2 pieces filet mignon steaks
  • 1 large ripe avocado
  • 1 teaspoon flaky sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 cloves garlic cloves
  • 2 sprigs fresh thyme sprigs

Directions

Step 1

Remove the filet mignon steaks from the refrigerator and let them come to room temperature for 20-30 minutes before cooking.

Season both sides of the steaks generously with flaky sea salt and freshly ground black pepper.

Heat a heavy skillet (preferably cast iron) over medium-high heat until very hot. Add 2 tablespoons of olive oil.

Once the oil is shimmering, place the steaks in the skillet. Sear them for 2-3 minutes on each side until they develop a beautiful golden-brown crust.
