  • 1 clove garlic (minced)
  • 1 teaspoon fresh thyme (chopped)
  • 8 phyllo dough sheets
  • 1 egg (beaten, for egg wash)
  • 1 cup Madeira wine
  • 0.5 cup beef stock
  • 2 tablespoons heavy cream

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Season the filet mignon steaks with salt and black pepper on both sides.

Step 3

Heat a skillet over medium-high heat and add olive oil. Sear the filets for 2-3 minutes per side to create a brown crust. Remove and let them cool.

In the same skillet, melt 2 tablespoons of butter. Add the finely chopped mushrooms, garlic, and thyme, cooking until the mixture is soft and fragrant (about 5 minutes). Remove from heat and allow it to cool.
