Ingredients

  • 2 sheets puff pastry sheets
  • 1 cup fig preserves
  • 0.5 cup soft goat cheese
  • 6 slices prosciutto slices
  • 1 cup fresh arugula
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons all-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Lightly dust a clean work surface with flour and roll out the puff pastry sheets to smooth out any creases.

Step 3

Cut each puff pastry sheet into 6 equal squares, yielding 12 squares in total.

Step 4

Spread about 1 teaspoon of fig preserves onto the center of each square, leaving a small border around the edges.

Step 5

Add a dollop (about 1 teaspoon) of soft goat cheese on top of the fig preserves.

Step 6

Fold a slice of prosciutto in half and place it over the goat cheese and fig preserves on each pastry square.

Step 7

Top each square with a small piece of arugula, about 2–3 leaves per piece.

Step 8

In a small bowl, whisk together the egg and water to create an egg wash.

Step 9

Lightly brush the edges of each pastry square with the egg wash, then fold them over diagonally to form a triangle. Press the edges together firmly to seal, and use the tines of a fork to crimp the edges.

Step 10

Arrange the sealed pastry triangles on the prepared baking sheet, spacing them at least 1 inch apart.

Step 11

Brush the tops of the pastries with the remaining egg wash for a golden finish.

Step 12

Bake in the preheated oven for 18–20 minutes, or until the pastries are puffed and golden brown.

Step 13

While the pastries bake, warm the honey slightly in the microwave or on the stovetop and stir in the fresh thyme leaves.

Step 14

Remove the pastries from the oven and let them cool for 5 minutes. Drizzle the warm honey-thyme mixture over the pastries before serving.

Step 15

Serve the Figaros warm, either as an appetizer or alongside a fresh salad.
