Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 Avocados, diced
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, finely diced
  • 0.25 cup Cilantro, chopped
  • 1 Jalapeño, finely diced (optional)
  • 3 tbsp Lime juice, freshly squeezed
  • 1 bag Tortilla chips (optional, for serving)

Directions

Step 1

In a medium bowl, toss the shrimp with 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Let marinate for 10 minutes while prepping the other ingredients.

Step 2

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, red onion, chopped cilantro, and diced jalapeño (if using).

Step 4

Drizzle the lime juice over the mixture and gently toss to coat. Season with additional salt and black pepper to taste, if needed.

Step 5

Once the shrimp have cooled slightly, chop them into bite-sized pieces (if desired) and fold them into the salsa mixture carefully to avoid breaking up the avocado too much.

Step 6

Transfer the Fiesta Shrimp and Avocado Salsa to a serving bowl. Serve immediately with tortilla chips or as a topping for tacos or grilled meats.
