Ingredients

  • 1 head Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 1 can Black beans
  • 1 teaspoon Smoked paprika
  • 1 cup Sweet corn (cooked)
  • 1 Red bell pepper
  • 0.5 Red onion
  • 0.25 cup Cilantro (chopped)
  • 1 Avocado
  • 0.5 cup Greek yogurt (plain)
  • 0.25 cup Mayonnaise
  • 2 tablespoons Lime juice
  • 0.5 teaspoon Garlic powder
  • 1 tablespoon Dill (fresh, chopped)
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce. Chop it into bite-sized pieces and place in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the salad bowl.

Step 3

Rinse and drain the black beans. In a small pan over medium heat, warm the black beans with 1 teaspoon of smoked paprika for 2-3 minutes. Remove from heat and let cool slightly before adding to the salad.
