  • 2 pounds boneless pork shoulder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 14.5-ounce can fire-roasted diced tomatoes, with juice
  • 2 pieces chipotle peppers in adobo sauce, chopped
  • 2 tablespoons fresh lime juice
  • 1 cup cilantro, chopped
  • 6 pieces soft sandwich rolls
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon lime zest

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Combine salt, black pepper, smoked paprika, cumin, and garlic powder in a small bowl. Rub the spice mixture all over the pork shoulder.

Step 3

In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side. Remove the pork and set aside.

In the same pot, add the diced onion, red bell pepper, and green bell pepper. Sauté for 5-7 minutes until softened.

Stir in the can of fire-roasted diced tomatoes and the chopped chipotle peppers. Bring to a simmer.

Once the pork is cooked, remove it from the pot and shred it with two forks. Return the shredded pork to the pot and mix it with the sauce. Stir in the lime juice and chopped cilantro.

In a small bowl, whisk together mayonnaise, sour cream, and lime zest to make a creamy lime spread.

Toast the sandwich rolls lightly, if desired. Spread a layer of the lime spread onto each roll.

Spoon a generous amount of the pork mixture onto the bottom half of each roll, then top with the other half of the roll.
