Ingredients

  • 1 pound Ground beef (80/20 blend)
  • 0.5 pound Spicy Italian sausage
  • 0.5 pound Chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons Cooking oil (vegetable or canola)
  • 1 medium Yellow onion, finely diced
  • 4 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 1 medium Jalapeño pepper, finely chopped (seeds removed for less heat, optional)
  • 1 14-ounce can Crushed tomatoes
  • 0.5 cup Beef broth
  • 2 teaspoons Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 1 lime Fresh lime wedges (optional, for serving)
  • 0.5 cup Grated cheddar cheese (optional, for topping)

Directions

Step 1

Heat a large skillet or Dutch oven over medium-high heat.

Step 2

Add 1 tablespoon of cooking oil to the skillet. Once heated, add the ground beef and spicy Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Transfer the cooked meat to a plate lined with paper towels to drain any excess grease.

Step 3

In the same skillet, add the remaining 1 tablespoon of oil. Add the diced onion and cook for 2-3 minutes until softened.

Step 4

Add the minced garlic, red bell pepper, and jalapeño to the skillet. Sauté for 3 minutes until the vegetables are fragrant and slightly softened.

Step 5

Stir in the chicken thigh pieces. Cook for 6-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.

Step 6

Return the ground beef and sausage mixture to the skillet. Stir everything together.

Step 7

Pour in the crushed tomatoes and beef broth. Stir to combine the mixture.

Step 8

Add chili powder, smoked paprika, cumin, cayenne pepper, salt, and black pepper. Mix thoroughly so that the spices evenly coat the meat and vegetables.

Step 9

Bring the mixture to a gentle simmer. Lower the heat to medium-low, cover, and let it cook for 15 minutes, stirring occasionally.

Step 10

Taste and adjust seasoning if needed. If desired, sprinkle fresh cilantro on top for garnish.

Step 11

Serve hot, topped with grated cheddar cheese and a squeeze of fresh lime juice for added flavor. Pair with crusty bread or rice for a complete meal.
