  • 12 ounces smoked sausage

  • 4 cloves garlic cloves
  • 1.5 cups white rice
  • 2 peppers chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce
  • 3 cups chicken broth
  • 1 teaspoon dried oregano
  • 0.5 teaspoons ground cumin
  • 1 teaspoon salt
  • 0.25 teaspoons black pepper
  • 0.25 cup fresh cilantro
  • 1 whole lime

Directions

Step 1

Slice the smoked sausage into thin rounds. Dice the onion and red bell pepper, and finely chop the garlic cloves.

Step 2

Heat the olive oil in a large skillet or pot over medium-high heat. Add the sliced sausage and cook for 4-5 minutes, until browned. Remove the sausage and set aside.

Step 3

In the same skillet, add the diced onion and red bell pepper. Cook for 5 minutes, stirring frequently, until softened.

Add the chopped garlic and cook for 1 minute, until fragrant.
