Ingredients

  • 12 oz Fettuccini pasta
  • 2 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 1 tsp Red pepper flakes
  • 28 oz Crushed tomatoes, canned
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh basil leaves, chopped
  • 4 quarts Water
  • 1 tbsp Salt (for boiling water)

Directions

Step 1

Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt to the water.

Step 2

Cook the fettuccini pasta in the boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the minced garlic and red pepper flakes to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 5

Add the canned crushed tomatoes to the skillet and stir well. Simmer for 10 minutes, stirring occasionally.

Step 6

Lower the heat and stir in 1 cup of heavy cream. Mix until fully incorporated and the sauce turns a light orange color.

Step 7

Add 1 cup of freshly grated Parmesan cheese to the sauce and stir until melted and creamy.

Season the sauce with 1 teaspoon of salt and 1/2 teaspoon of black pepper, adjusting to taste if necessary.

Add the drained fettuccini to the skillet, tossing it in the sauce until well-coated. If the sauce is too thick, gradually add some of the reserved pasta water to achieve your desired consistency.
