Ingredients

  • 12 ounces fettuccini pasta
  • 6 ounces pancetta
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccini and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy and browned, about 5-7 minutes. Remove with a slotted spoon and set aside on a paper-towel-lined plate.

To the same skillet, add the chopped yellow onion and sauté until softened, about 4-5 minutes. Add the minced garlic and cook until fragrant, about 1 minute.
