Ingredients

  • 12 oz fettuccini pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 whole lemon, juiced and zested
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccini according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and cook for 1 minute until fragrant, being careful not to let it burn.

Stir in the lemon juice, lemon zest, and chicken broth. Simmer for 2 minutes, allowing the flavors to blend.
