  • 12 oz fettuccini pasta
  • 8 whole fresh figs
  • 4 oz goat cheese
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 cloves garlic
  • 1 tsp fresh thyme leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup parmesan cheese, grated
  • 1 tbsp olive oil
  • 1 cup water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccini and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

While the pasta cooks, slice the fresh figs into quarters and set them aside.

Step 3

In a large skillet, heat the olive oil and butter over medium heat until the butter melts. Add the minced garlic and sauté for 1 minute until fragrant.
